Benito Molina: Baja Chef Series Guest Chef
This Sunday, September 23rd, we welcome our second chef of the Baja Chef Series, Benito Molina of Manzanilla. Benito will be cooking with Chef Sedlar until Tuesday, September 25th.
" I consider Benito Molina to be the 'avant-garde chef' of Baja. The first time I tasted his squid with red beet juice, I was transported. I knew I was in the port city of Ensenada, but the flavor was also firmly grounded in the earthy red terroir of the root vegetable that colored it- and, upon first seeing it, the dish visually knocked me out! Brilliant!"
