Growing in New Mexico, I always thought that some day I'd wind up with my own little ranch, just as my grandparents and aunts and uncles had before me. Finally, that dream has come true for me, but in a very different form, in a dramatically different setting: Playa's rooftop garden, our Cielo Verde.

"You screwed up," chef John Rivera Sedlar told Getty curator Andrew Perchuk in the months before Pacific Standard Time began. The sprawling, Getty-funded celebration of postwar SoCal art should have included food. But Perchuk, already working to facilitate exhibitions at 60-plus institutions and organizing his own show, felt he had plenty to worry about besides appetizers and entrees. Later, though, after the frenzy surrounding PST's launch subsided, he decided Sedlar was right: PST should include food.

THE SECRET MENU will be presented only to those guests who know to ask for this special menu. Select single-village mezcal cocktails from Del Maguey will also be offered.

The Secret Menu will be available from February 7th until March 31st.

Maize: John Rivera Sedlar, modern master of southwestern cuisine, pays homage to the simple, time-tested grain

When we think of maize, we think of humans’ ability to pull sustenance from soil. Both ancient and symbolic, the grain was cultivated and consumed by the Olmec and Maya in pre-Columbian Mesoamerica, before conquistadors and colonists learned of its miracles and planted the hearty crop across the globe, where it continues to be ubiquitous.

Now, John Rivera Sedlar—named Esquire’s 2011 chef of the year—gives maize its due at his L.A. restaurants Rivera and Playa. The most pared-down preparation, which truly glorifies the ingredient, is in the form of tortillas florales, made from fresh masa and served all chewy and warm with a generous serving of what Sedlar’s menus call Indian butter (guacamole).

But know this: These are no run-of-the-press tortillas. Sedlar’s flair for visual artistry on the plate, as well as his occasional flights of culinary whimsy, are undeniable, for as the name suggests, vibrant organic edible flowers are delicately pressed into each cake before it is cooked.

When last we checked in with Sedlar, he relayed that he was “in Mexico teaching Mexican chefs how to make tortillas.” So, when he assures us this is “the best corn tortilla in the world,” we tend to believe.

Who better to conceive LA magazine’s punch of the year than barman extraordinaire Julian Cox, mixologist at Rivera, Playa, Sotto, Picca and recently opened Short order? The result—being served through the season exclusively at Playa on Beverly— is a whimsical and ethereal concoction inspired by chiles en nogada, a fall dish from Puebla, Mexico, reportedly first prepared for Emperor agustín de iturbide in the 19th century. like the dish, Cox’s mezcal-based punch features fresh cream and pome- granate, with a hearty, flavorful note of nocino (walnut liqueur). Get it while you can.

Playa: Start things off at this smart, casual Latin restaurant from Rivera's John Sedlar with blue corn muffins and dreamy almond butter. Or maybe an order of tortillas florales (with edible flowers) and marmalade. More substantial fare includes duck hash with fingerlings, roasted peppers and an egg orhuevos with polenta, lardons and rajas. Eggs benedict is made with Spanish jamón and chipotle bearnaise. But my favorite is the tamale made with cracked corn masa and pulled pork, topped with a sunny-side-up egg. For dessert, I love the goats milk ice cream with cornmeal cookies — or a cocktail from mixologist extraordinaire Julian Cox.

We were heartbroken last year when Grace decamped from Beverly Boulevard to move into a new space Downtown. But our spirits were definitely brightened when we learned that one of our favorite Downtown chefs, John Sedlar of Rivera, was opening a second restaurant in the space called Playa.

I squeeze past the podium, following the hostess sashaying in front of me toward our table at the new Playa. Light fixtures like giant albino sea urchins dangle overhead. A waiter crosses my path bearing a plate with a single large clamshell the size of a purse. Our table is at the very back, past a handsome rusted steel wall and tables filled with startling plates, laughter and beguiling cocktails.

Knowing Sedlar, he and chef de cuisine Kevin Luzande won't stop tinkering with the menu. To keep up, I'm thinking I may have to become a regular of sorts. Lucky me.

The restaurant just announced its new "Late Night at Playa" menu. From 10 p.m. to close (midnight on weeknights, 1 a.m. on weekends) diners at the bar and communal tables can opt for a $22 prix fixe special that includes a choice of two maize cakes and a cocktail or glass of wine.

Armagnac and bitter corbezzolo honey, a costly substance difficult to find even in Sardinia; another features tobacco-smoked rye whiskey and toasted chiles.

Any food connoisseur in Los Angeles is quite familiar with the former restaurant, Grace on Beverly Blvd. Having loved the food at that stuffy little place, I was sad to see it go, but more intrigued to see what it would be replaced with. After daily drive bys past my former haunt, the newly redesigned restaurant had finally secured fresh ownership and an updated look, with a Spanish tapas style menu not even the pickiest of “foodies” could ignore.  Enter,Playa, the latest Latin restaurant from Chef John Sedlar.
